Combine Corn Pie And Cheese For A Yummy, Gooey Halloween Dip
With Halloween just around the corner, it’s no surprise that Emily has conjured some amazing (kind of creepy) dishes for us. They are perfect for a Halloween costume party—just triple up the recipes or, to munch on at a last-minute scary movie marathon lime. Somehow, these recipes are also fairly simple to follow, with relatable Trini twists and easy-to-find ingredients. As usual, Emily will make you impress with ease this Halloween.
SWEET AND SPICY CORN DIP
A hot and cheesy party dip met a Trini corn pie and made this quick, simple and sinful snack! Bacon, crab, shredded chicken or spicy minced meat can be added to the mixture to make for a heartier dish. Perfect for a Halloween lime.
Yields: 20 Servings
INGREDIENTS
- 1 425-gram can cream style corn
- 3 tablespoons brown sugar
- 2 teaspoons salt
- 4 ounces cream cheese, room temperature
- 1 ½ cups shredded Mexican cheese* plus, ¼ cup for topping
- 1 tablespoon pepper sauce
- 1 teaspoon finely chopped chandon beni
- 1 teaspoon chopped chives
- 1 teaspoon finely chopped garlic
*A blend of Monterey Jack, Pepper Jack and Asiago cheeses
DIRECTIONS
- Preheat oven to 400°F.
- In a large bowl, add all of the ingredients (except for the ¼ cheese) and mix until evenly blended.
- Place mixture into a heat-proof baking dish and top with remaining cheese.
- Bake for 15 minutes, or until the cheese on top is golden-brown and bubbling.
- Serve warm with tortilla chips, pretzels, garlic bread, pita chips or crackers.
