The Propa Eats Cook Up: Chaguanas

This weekend, on Sunday, August 4, we hosted our very first cooking competition at Pierre Road Recreation Ground in Charlieville. While the Guardian Community Games were in full swing, four teams — the Felicity Conquerers, Creative Duck Crew, Duck Soldiers and Ryu Dan Dojo — bubbled up pots of curried meat, competing to win the hearts of our judges: Drew Howell (Propa Eats’ videographer and self-proclaimed food expert), Tricia Gregoire (chef and former award-winning member of the Trinidad and Tobago National Culinary Team 2018) and Zaak Mustapha (critic behind the Instagram account @foodietaleswithzaak). 

PLOT TWIST! Each team had to make use of a secret ingredient: Karibbean Flavours’ Pomeroon Cassareep. (For those of you who are unfamiliar with it, cassareep is a thick brown syrup used to flavour pepperpot). Many chefs mixed it into murtani; others into their curry paste. After 3 hours of swelling roti on the tawa and chunkaying pots of duck and hard fowl, judges announced that Duck Soldiers won the competition, taking home a huge hamper of Karibbean Flavours seasonings and sauces and a 40″ Smart TV from Standard Distributors Limited.
