WATERMELON-GINGER SPRITZ

Take advantage of the beautiful watermelons that grace fruit stalls and trucks all over Trinidad and Tobago. Our Watermelon-Ginger Spritz is a kid-friendly, refreshing drink with a hint of fizziness that skimps on the calories but not on the deliciousness (it’s the perfect alternative to sugary soda). This fruity drink is great for a cool down during our very hot dry season or for some much-needed rehydration after a night out. We blend the drink with mint for an extra crisp note and ginger for an added dimension of flavour.

This drink can easily be made into a grown-up cocktail by adding a splash of vodka or gin and then topping it off with sparkling water for effervescence.

Total Time: 10 mins

INGREDIENTS
  • 4 cups chopped watermelon* 
  • 5-inches ginger root, peeled 
  • 4 sprigs mint 
  • ¾ cup water 
  • 1 cup ice 
  • 2 cups sparkling water 
  • 2 tablespoons honey

*Don’t bother to remove the watermelon seeds, they’re good for you!

DIRECTIONS
  1. In a blender, add all ingredients except sparkling water. Blend on high until smooth, about 45 seconds.
  2. Serve chilled. Garnish with a sprig of mint.
