Sweet ‘n’ Spicy Pineapple Salsa

This pineapple salsa is full of Vitamin C and packed with layers of flavors of sweetness and spice. Ingredients

  • 1 medium pineapple
  • 2 tomatoes, diced
  • 1 sweet pepper, chopped
  • 1 medium red onion, diced
  • 2 green pimentos
  • 6 blades chadon beni
  • 2 sprigs parsley
  • 1 lime
  • ½ teaspoon salt
  • 1 dash of bitters
  • 1/2 scotch bonnet pepper or pepper sauce (optional)

Directions

  1. Cut your pineapple in half and scoop out the inner pineapple flesh. Dice up the scooped pineapple flesh and save the outer core of the pineapple as your ‘serving bowl’ for the finished salsa.
  2. In a medium serving bowl, combine the pineapple, tomatoes, sweet pepper, red onion, pimentos, chadon beni and parsley and mix thoroughly.
  3. Add the lime juice, bitters and salt, and stir to combine. Empty the salsa in the pineapple ‘serving bowl.’
  4. Allow for the salsa to rest to marinate for 20 minutes before serving.
