All that home comfort you love, but a little easier on the tummy for those who don’t do well with dairy. It has a perfectly rich and creamy texture, it’s full of great flavour, it’s easy to make and will always be a crowd fave.

But don’t worry, if you do love eating cheese and flour, there are options for you, too.

Ingredients

  • 1 cup cassava
  • 1 cup eddoes
  • 1 cup sweet potato
  • 1/4 cup olive oil
  • 1/3 cup Naturally Almond Original almond milk
  • 1/3 cup cheese, optional
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon garlic
  • 1 sprig rosemary
  • 1 tablespoon breadcrumbs, optional

Directions

  1. Wash and peel ground provision. Dice into 1-2 inch chunks.
  2. In a medium-sized pot, add the chopped provision and fill with water. Bring to a boil over medium/high heat then reduce to a simmer for 15-20 minutes.
  3. Test for doneness by poking a piece of provision with a knife. If the knife goes through with ease then it is ready. Remove from the heat, drain and set aside.
  4. In a small pan add the olive oil over low to medium heat. Add the onions and garlic and sauté for 2 to 3 minutes until softened.
  5. Add the milk, salt, pepper and rosemary. Remove from heat when it begins to simmer.
  6. Add the milk mixture to the ground provision and mash until smooth. Transfer to a baking dish and top with breadcrumbs or cheese.
  7. Bake on 400° for 10 minutes until golden or low broil for 5 minutes.
