Ingredients
- 1 cup cassava
- 1 cup eddoes
- 1 cup sweet potato
- 1/4 cup olive oil
- 1/3 cup Naturally Almond Original almond milk
- 1/3 cup cheese, optional
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon garlic
- 1 sprig rosemary
- 1 tablespoon breadcrumbs, optional
Directions
- Wash and peel ground provision. Dice into 1-2 inch chunks.
- In a medium-sized pot, add the chopped provision and fill with water. Bring to a boil over medium/high heat then reduce to a simmer for 15-20 minutes.
- Test for doneness by poking a piece of provision with a knife. If the knife goes through with ease then it is ready. Remove from the heat, drain and set aside.
- In a small pan add the olive oil over low to medium heat. Add the onions and garlic and sauté for 2 to 3 minutes until softened.
- Add the milk, salt, pepper and rosemary. Remove from heat when it begins to simmer.
- Add the milk mixture to the ground provision and mash until smooth. Transfer to a baking dish and top with breadcrumbs or cheese.
- Bake on 400° for 10 minutes until golden or low broil for 5 minutes.
