Veggie Delight Tofu Scramble Recipe

Simple tofu scramble, a vegan alternative to scrambled eggs. It’s so easy to make, high in protein and uses easy to access ingredients you may already have in your fridge and pantry!

Ingredients

12 ounces/1 ½ cups firm tofu
1/3 teaspoon salt
1/4 teaspoon saffron powder
1/8 tsp ground black pepper
1/2 cup sliced carrots (sliced)
1/2 cup sliced sweet pepper (sliced)
1/2 cup sliced onion (sliced)
2 cloves garlic (grated)
2 tablespoons olive oil
1 tablespoon pepper sauce (optional)

Directions

  1. Chop the tofu and use a fork to crumble it into bite-sized pieces.
  2. Add olive oil to a frying pan and when it’s hot, add the carrots and cook for 1 minute.
  3. Add remaining vegetables (onions, sweet pepper and garlic) and allow to sauté.
  4. Add the tofu and all seasonings (salt, saffron powder and ground black pepper) and pepper sauce. Stir until well combined and cook over medium-high heat for 5 to 10 minutes. Stir occasionally.
  5. Serve immediately over toasted bread.
