Ingredients

Makes 1 12-inch pizza

Pizza dough
  • 2 1/2 – 3 cups bread flour (or all-purpose flour)
  • 1 ½ teaspoon sugar
  • 2 teaspoons yeast
  • ½ cup warm water
  • 2 tablespoons powdered milk (optional)
  • 2 teaspoon olive oil
  • 1 teaspoon salt
  • 1/4 cup cornmeal
Toppings
  • 1/3 cup BBQ sauce
  • 1 cup cooked chicken
  • 1 tablespoon dried Italian seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 small red onion, thinly sliced
  • 1/2 sweet pepper, thinly sliced
  • Basil as garnish (optional)

Directions

  1. Prepare pizza dough, by first activating the yeast. In a small bowl, stir in the sugar in warm water until dissolved. Add yeast and mix well. Cover with a damp towel and leave for 10 minutes. After 10 minutes, the water should have developed a top layer of yeast indicating the yeast is alive and activated.
  2. In a large bowl, combine the flour, salt and powdered milk and mix well. In small increments, begin pouring the yeast mixture with the flour. Knead the flour until it becomes a soft dough which can take approximately 10 minutes by hand. Shape dough into a round lump and cover with plastic wrap and lay aside on your counter for 1/2 hour.
  3. Preheat your oven to 400 ° F.
  4. After 1/2 hour, the dough should have doubled in size. Using two fingers, poke the center of the dough to deflate. Knead the dough once again on a flat surface sprinkled with flour.
  5. Sprinkle your cornmeal on your tabletop and roll out dough on top using a rolling pin. Roll out dough in a circle or shape of your baking pan.
  6. Gently lay your rolled out pizza dough on the baking pan and lightly brush the dough with olive oil. Using your fork, prick small holes on the surface of the dough to prevent air bubbles.
  7. Place dough in the oven for 5 minutes to cook dough before adding your topping.
  8. Remove pizza dough from the oven and begin laying your pizza toppings. First, spread on your barbeque sauce, starting from the center and spreading out throughout the pizza in a circular motion, leaving the outer 1/2 inch of the pizza dough plain for a nice crust.
  9. In the remaining barbeque sauce, toss your cooked chicken and evenly distribute over the entire pizza. Then add the cheeses, red onion and sweet pepper and sprinkle with dried Italian seasoning.
  10. Place assembled pizza in the oven and bake pizza for 10-12 minutes.
  11. Remove from the oven and top with basil, if desired. Slice pizza while hot and enjoy!
