Add Orange Zest To Your Bread Pudding For Amazing Flavour

A large part of helping our earth is to use every part of seasonal fruits and vegetables in a variety of ways. This week we chose our favourite citrus, orange, to utilise to its full potential. In three recipes we took the zest, pulp and juice of the orange to make delicious recipes. Try this method with most fruits and vegetables to do your small part for Earth Day. 

APPLE & ORANGE BREAD PUDDING

Orange zest combined with the dry flavours of white wine turns this bread pudding into a gourmet dessert. Warm and comforting, it’s a happy medium between sweet apples, aromatic orange zest and deliciously soaked bread.

INGREDIENTS
  • 2 stale hops bread, sliced 
  • 1 cup milk 
  • 1 ½ tablespoons orange zest 
  • 1 egg 
  • 4 tablespoons white sugar, divided 
  • ⅛ cup white wine 
  • 2 apples, thinly sliced 
  • Butter, for greasing
DIRECTIONS
  1. Preheat oven to 350°F. Grease an 8-inch square baking dish.
  2. In a medium-sized bowl, whisk milk, eggs, orange zest and 2 tablespoons sugar; set aside.
  3. Add apples to baking dish. Sprinkle sugar and white wine over apples. Then, press slices of bread into apples.
  4. Pour milk mixture over bread and apples and let soak for 30 minutes.
  5. Bake for 25 minutes or until bread pudding has set.
