A Sweet Rice Recipe from Trinidad (Caribbean Rice Pudding)

Out of all sweets that are prepared on Diwali, sweet rice is a definite must for the Hindu community. During Divali, before lighting deyas, Hindus undergo a period of fasting and praying for the blessings of Mother Lakshmi on their homes. It’s then that they offer the Goddess her favourite treat: ‘Sweet Rice’, which is essentially rice pudding (but you know Trinis have to make up their own names for everything). Only then will Mother Lakshmi welcome her blessings onto you and your family.

Sweet Rice 

Yields 6 servings

Ingredients

  • 1 cup white rice washed
  • 2 tbsp ginger
  • 1/2 cup condensed milk
  • 1/2 cup evaporated milk
  • 1/4 teaspoon cardamom powder
  • 2 teaspoon ghee
  • 1 stick cinnamon
  • 2 cups water to boil

Directions

  1. To a pot add rice, ghee and cinnamon.
  2. Cook on medium heat until the rice is very tender.
  3. Add cardamom, ginger, evaporated milk and condensed milk.
  4. Cook until thickened.
  5. Serve warm.
